*Decaffeinated Cane Sugar Process:

This coffee is decaffeinated directly on-site by Colombian producers using a completely innovative technique. Rather than using traditional methods such as decaffeination with methylene chloride or water, a sugar cane derivative is used: ethyl acetate.

The green coffee beans are steamed for 30 minutes to open the pores of the coffee, facilitating caffeine extraction.

The coffee is placed in a bath of water and ethyl acetate, a well-known derivative of sugar cane produced through fermentation.
The caffeine is "captured" by the solution, which naturally binds to the chlorogenic acid salts in the coffee.
This process is repeated several times over approximately 8 hours, after which the coffee is steamed again to remove any remaining traces of ethyl acetate. All that remains is to dry the coffee and prepare it for roasting!
