As second-generation producers, the Osafumi brothers offer this premium Matcha at an excellent price.
It is produced near Kyoto (the ancient capital of Japan) in the legendary Uji region, specifically in Ujitawara, the hometown of Nagatani Soen, inventor of the Sencha style.
Its fresh and flavorful emulsion offers a velvety texture and a slightly bitter and sweet taste with notes of grass and snow peas.
A touch of iodine completes the experience, gently tingling the palate.
For optimal freshness, consume the Matcha within 6 months of opening and keep refrigerated.
Preparing Traditional Matcha
Sift the desired amount of Matcha through a fine-mesh sieve.*
Warm the chawan (bowl) with hot water.
Discard the water and then wipe the bowl with a clean cloth.
Depending on the desired strength, place 1 to 2 grams (1/2 to 1 teaspoon) of matcha in the center of the bowl.
Gently pour 65 to 100 ml of water at 75°C over the tea.
Whisk vigorously with a chasen (matcha whisk) for about 30 seconds until a smooth foam forms.
